Head Chef John Lyons brings a refined yet approachable style to ZIMI, shaped by experience across some of Sydney and the UK’s most respected kitchens.

French-trained, with time spent in Michelin-starred restaurants in the UK and at Cottage Point Inn, John’s approach is grounded in modern Australian dining - led by seasonal produce, bold flavours and a focus on simplicity.

At ZIMI, his menu is designed for sharing - bringing together quality ingredients and thoughtful technique in a way that feels elevated, but never overworked.
